Bimber 4 Year Old Whisky Sponge Edition 45 2017 Single Cask (2021) 70cl
Whisky Sponge Edition 45 is a 2017 barrel of Bimber. Not only our first bottling from these London scallywags but also our very first 'finished' Sponge.
This cask was distilled in 2017 and bottled at 4 years of age, with a final 10 month period of finishing in a Bimber ex-bourbon barrel which had subsequently been used to age a Brew By Numbers imperial stout.
The result is this extremely juicy, feisty and charismatic dram. A big muddle of various funky influences that include, but are not limited to: proper floor malted barley, interesting yeasty fermentation stuff, 'warmer than Scotland' climate maturation and big punchy Stout cask fingerprints.
It has been bottled at natural cask strength and tastes like marmite and banana sandwich eau de vie!
About Bimber
Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at their own cooperage. Bimber uses direct fire to heat the small copper pot stills, and matures the spirit in hand-selected casks. The whisky is also bottled on site.
Their hand-crafted approach to whisky production passionately combines traditional methods, expertise and commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and they released their inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with their trademark accessible, fruit forward character.
