1 of 187 bottles.
This was bottled exclusively for the members of the prestigious Soho Whisky Club in Central London.
Bimber is a London distillery & this is one of the first casks to be issued as a bottling. Although the distilling date is missing, it is a minimum 3 years in a sherry cask. Chosen by the owners of the club, they certainly do not sacrifice quality nor taste to simply create a bottling for the club. Their other bottlings have demonstrated this with flying colours. In particular their Lindores Quarter Cask which is available from Whisky Situation which we HIGHLY recommend.
A beautifully sweet and rich single malt, full matured in a single Ex-Pedro Ximenez sherry cask. Sourced from Spain, this cask was previously utilised in a Jerez Solera for several decades, imparting a delectable selection of bright and rich fruit-forward notes.
Tasting Notes
Nose : Rich and beautifully sweet with succulent cranberries and redcurrant jelly. Apple pastries and rum-soaked raisins are joined by cinnamon rolls and chocolate gateaux
Palate : Viscous and opulent with nutmeg and anise sprinkled atop of a rich fruit-packed sponge cake. Gingerbread is served with hot chocolate whilst liquorice sits with mentholated oak
Finish : Enduring sweet fresh sherry with fading white pepper and a touch of mint leaf
About Bimber
Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at their own cooperage. Bimber uses direct fire to heat the small copper pot stills, and matures the spirit in hand-selected casks. The whisky is also bottled on site.
Their hand-crafted approach to whisky production passionately combines traditional methods, expertise and commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and they released their inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with their trademark accessible, fruit forward character.
