For the new boy on the block, Bimber Distillery has won numerous awards and recognition, and their small batch limited releases sell out rapidly, sometimes within hours.
This is the second release of its small batch American white oak casks.
Bimber Ex-Bourbon Oak Casks Batch No. 2, a single malt, marries the fruit-forward, accessible spirit of Bimber with the sweet rich vanilla and spices of ex-bourbon casks.
It has flavours of apples, apricots, peaches, vanilla, caramel and spices and comes at a strength of 52.2% ABV.
It is natural colour and non-chill filtered and is one of only 2950 bottles.
This is an elegant and easy-to-drink whisky.
Tasting Notes
Nose : Green apple peels and dried stone fruits are joined by milksoaked breakfast cereals, whilst vanilla sponge cake and desiccated coconut sit with buttered toast.
Palate : An impactful combination of bright orchard fruits, baked apricots and sprightly pepper spicing sit with gently charred oak and creamy vanilla.
Finish : Lasting sweetness tempered by persistent spicing.
About Bimber
Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at their own cooperage. Bimber uses direct fire to heat the small copper pot stills, and matures the spirit in hand-selected casks. The whisky is also bottled on site.
Their hand-crafted approach to whisky production passionately combines traditional methods, expertise and commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and they released their inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with their trademark accessible, fruit forward character.
