Bimber may be newcomers to the malt whisky game, but they could scarcely have imagined a better start to proceedings. Re-charred Oak Cask Batch 001 is only the second of its kind from the London distillery, a beautiful 51.9% 5000 bottle release matured in charred American oak casks

Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks which are left a little dirty so that the bacteria and yeast left behind enhances the next spirit.
