Kyoto Ki Noh Bi Dry Cask Aged Gin 15th Edition 70cl

KI NOH BI is a version of KI NO BI that has been matured in either whisky, rum or wine casks. The labels continue the tradition of Number One Drinks Company bottling a series of Karuizawa single casks in collaboration with the Kamiasobi Noh Troupe. The distilling team carefully monitor the aging process to ensure we achieve the optimum balance between cask influence and botanical profile.

This Japanese gin has been created, blended, matured and bottled at our blended artisan distillery in Kyoto: 11 botanicals are grouped by flavour into what we call the 6 Elements, which are macerated and distilled separately, before being blended together with Fushimi water.

Some of the resulting Ki No Bi Kyoto Dry Gin is then matured in a mizunara (Japanese Oak) cask while the remainders fills a bourbon barrel previously used to mature single malt whisky from Chichibu Distillery.

Regularly monitored by our distilling team, the gin from both casks is carefully blended together to ensure new dimensions of flavour have been added while retaining the exquisite elegance of the original spirit.

The label continues the tradition of Number One Drinks Company bottling a series of ex-Japanese whisky single casks in collaboration with the Kamiasobi Noh Troupe. The Kyoto Distillery was named International Gin Producer of the Year 2018 by the International Wine & Spirits Competition and Craft Producer of the Year 2019 at the Icons of Gin.
