This is a single refill sherry hogshead of Ballechin single malt.
Ballechin is a mysterious whisky made at Edradour distillery from a secret mashbill that includes but is not limited to: cigarettes, Marmite, truffles, entropy, bees, prog-rock and farmers.
It was distilled in 2005 and had casual discussions with an assortment of wooden staves for 14 years. It was bottled at 55% because that enables me to pontificate and intellectualise the actually incredibly simple process of independent bottling. This is the first ever bottling of Ballechin. Apart from the others.
TASTING NOTES
Nose: some pipe tobacco, leather jackets and mentholated notes as well as some varnished top notes. Damp warehouses, soot and flax. Chocolate and Schwarzwalderham in the background. Punchy pepper too. Good start.
Mouth: there’s a darkness of soot and pure chocolate, but also a brighter fruity side. Cherries in booze, brambles, berry eau-de-vie. A little chilli and walnuts. Plenty of tobacco leaves and leather again, mixed with earthy smoke and a little oak char.
Finish: long, with pepper and liquorice, light soy sauce and bitter chocolate.
