The ongoing semi-peated whisky from Indian distiller Paul John. It combines their fruity unpeated single malt whisky with some 20-25ppm peated spirit to give a sweet and spicy whisky balanced by an underlying earthy smoke.

Edited is the peated variant of Paul John. The peat is the only ingredient that does not come from India, but from Scotland. Roughly 15% of the vatting is peated, to a level of about 20 to 25 ppm. Like the other whiskies of Paul John, Edited is fully matured in Bourbon casks and bottled un-chill filtered and uncoloured. Jim Murray gives this whisky 96.5 points in his Whisky Bible 2014 and the predicate “Liquid Gold”.

Tasting Notes 

Nose : Honey and cocoa are laced with a hint of smokiness and a shot of espresso. A deeper whiff reveals fruity fragrances.

Palate : The grassy flavours of barley show up first, but gently make way for subtle peat notes. They slowly dissolve and pave the way for a rush of mint and mocha.

Finish : The finish is long and drawn out. You can sense a hint of spice and chocolate mint as it ends on gentle peat notes.

About Paul John

John Distilleries PVT Ltd. was founded in 1992 by Paul P. John. He is a first generation entrepreneur with degrees in law and commercial economics. The company is headquartered in Bangalore, while production takes place in Goa. In the early years, the company was mainly involved in the production of blended whisky, brandy and wine. This led to sales of over 10 million cases of Original Choice (the company's flagship) per year, making it the leading brand in the Indian whisky market. In 2008, the decision was made to also start producing single malt whisky, in order to penetrate the premium market. The name of this whisky became Paul John Single Malt. The distillery has a set of two copper pot stills (one for the wash and one for the spirit) that can produce 3000 litres per day. Maturation takes place in an underground, climate-controlled space, there are approximately 10,000 Bourbon barrels. Master Distiller Michael John (no relation) has a number of idiosyncratic methods. The wash has an alcohol percentage of only 5%, normally 8%, which leads to more sweetness in the spirit. The spirit is casked at a strength of 55%. Due to the tropical climate and an Angel's Share of 10 to 12%, the whisky has a cask strength of 57% after three years. Apart from the limited use of peat (Scottish), all ingredients come from India. Since May 2013, Paul John has released two permanent whiskies, Brilliance and Edited, both four to five years old. In addition, there are limited edition single cask bottlings available.
