Proofed at 114.5, this High Proof Kentucky Straight Bourbon has a bright nose of tangerine, preserved lemon, and brioche, which lead to a deep and lush palate of dried papaya, toffee, cocoa, and almonds.

Through a combination of careful barrel selection, blending in small batches, and meticulous proofing, each Pinhook vintage has a personality as unique as the horse on the label. Pinhook’s High Proof Bourbon is a limited annual release comprising a small selection of our finest barrels, blended for whiskey enthusiasts and connoisseurs. It’s bottled close to or at cask strength, at a proof chosen to maximize complex flavors and integrate them with the alcohol for a long and balanced finish.

To date, Pinhook has sourced their bourbon from MGP, but Bohemian Bourbon High Proof marks a drastic change for the company. For the last few years they have been contract distilling a proprietary mashbill with Castle & Key Distillery. Bohemian Bourbon High Proof was distilled and aged at Castle & Key. A total of 100 barrels were blended and proofed by Sean Josephs, Pinhook’s co-founder and master taster to create this bourbon. Bohemian is the first bourbon to come out of the resurrected Old Taylor Distillery since it was abandoned in 1972.

Tasting Notes 

Nose : Lively and bright, the nose opens with light ripe pears, a bouquet of floral scents, and a hint of caramel which does a good job of masking its higher proof. Inhaling deeper brings out corn and new oak, which remind you of the youth of the bourbon, but also mingle nicely with the other scents. While it’s not an overly complex nose, it’s enjoyable and one that seems suited for the late spring season in which it was released.

Palate : The youth of the bourbon radiates in the palate as bitter wet oak and corn take centre stage. These are joined with rye spice and green peppercorns. The palate has an oily mouthfeel and is not shy in displaying its high proof title. Fighting to get out from behind the heat are sweeter notes of vanilla and caramel which try to balance out the more bitter notes. However, the heat makes that hard to do, leading to an unbalanced overall palate.

Finish : The high proof of the bourbon combines with a burst of spice to start off a fiery finish. Once these dominant flavours die down, they’re followed by a drier flavor of leather along with a very light note of dried peach. Unfortunately, that wet oak flavour carries over to the finish and casts its shadow during a long slow burn down.

About Pinhook 

Founded in 2011 by long time friends Sean Josephs, Charles Fulford, and Jay Peterson, Pinhook started with a shared vision to bring a fresh take to bourbon. Driven by curiosity, they set out to tease the best qualities out of every barrel they would encounter, and build a whiskey around the results. Each brought different skills to the table: Sean, a certified sommelier with an extensive knowledge of American whiskey; Charles, an expert in design and branding; and Jay, with deep roots in business and the horse industry. Despite their varied backgrounds, they all had one thing in common: a love for American whiskey.

Obsessed with bourbon’s history and excited about its future, they wanted to use their combined expertise to craft bourbon and rye in a new way; one that would both wow committed whiskey fans and create new ones. In 2011, they purchased 20 barrels from Lawrenceburg Distillers in Indiana (now MGP) and shipped their barrels to Kentucky for aging. Over the next three years, they visited Kentucky frequently to monitor their barrels and find inspiration in the birthplace of bourbon. During these early Kentucky adventures, they discovered the many parallels between bourbon and thoroughbred racing which led them to a eureka moment and the name Pinhook, an old industry term for buying young horses and seeing them through to racing maturity. 

Pinhook released its first bourbon in the fall of 2014 to considerable acclaim. The next major step came in 2017 as Castle & Key restored production at Kentucky’s abandoned Old Taylor Distillery, and Pinhook began distilling its own mash bills there. The resulting bottles were the first to come out of this historic site in nearly 50 years, and now form the basis of Pinhook’s core whiskeys.

In the years since, the Pinhook approach has continued to resonate with whiskey drinkers. Today, Pinhook is sold in about half the US states. With a commitment to authenticity and integrity, plus a healthy dose of curiosity, Pinhook continues to make its mark on the whiskey world – crafting bourbon and rye that’s as approachable as it is delicious, consistently captivating whiskey lovers everywhere
