The Shizuoka Distillery is a relatively new player in the world of Japanese whisky, and it's generating a lot of interest both domestically and internationally. Its proximity to Mount Fuji means it has access to some of the purest water sources in Japan. The climate in Shizuoka Prefecture, influenced by both mountainous and coastal conditions gives the whisky unique characteristics. Shizuoka 2018 - World Symphony Series - Private Cask #2018-324 is a non-peated Japanese single-cask single malt, aged in a bourbon cask for just under 4 years. This is a private cask bottling made for the International Connoisseur Society of Taiwan. It has flavours of vanilla, caramel, apples, pears and cinnamon and comes at a cask strength of 50% ABV. Part of the World Symphony Series, Shizuoka Private Cask is a peated single malt, that was matured in a single bourbon barrel #2018-324. This is one bottle of only 280 produced.

Tasting Notes 

Nose : Honey, apple, fruity, hay, cereals, whiff of solvent and varnish, vanilla, little citric.

Palate : Punchy, fruity, vanilla, cookie dough, honeydew, subtle sweetness, hay, cereals, yellow fruits, citric, hint of solvent and varnish.

Finish : Medium long, warm, spices, zesty, citric, vanilla, little fruity.

About Shizuoka

Shizuoka Distillery is generating a lot of excitement among Japanese whisky enthusiasts. Founded in 2016 by Taiko Nakamura, the distillery has rebuilt the mill and wash still from the closed Karuizawa Distillery. Situated approximately halfway between Tokyo and Nagoya, it is high in the mountains on the banks of the Nakakouchi River. The distillery is equipped with a 1-ton mash tun and different types of washbacks made from Oregon pine and Japanese cedar—a nod to sake fermentation. It has two wash stills: one 3,500-liter from the former Karuizawa Distillery and a new direct wood-fired 5,000-liter (referred to as pot still K and W respectively). While Glenfarclas Distillery and others retain direct-fired stills, this is reportedly the only whisky distillery in the world solely burning timber to heat a wash still during distillation. Scottish coppersmiths Forsyths fabricated both the wood-fired wash still and the spirit still, while there is also a hybrid Holstein still on-site. With this setup, Shizuoka is making distillate from 100% Japanese-grown barley, an unusual step, as the majority of whisky distilled in Japan is made from imported barley.
