Starward 7 Year Old Tawny Cask #2 2022 70cl
Another absolutely cracking limited edition release from Australia's Starward, Tawny is a single malt which has spent its entire maturation in tawny fortified wine octaves! Both fresh tawny casks from the Yalumba winery as well as charred tawny casks from SA Cooperage were used, and the whisky was crafted specially to be an after dinner sipper, full of rich dried fruit, spice and nuts.
Tropical, fruit with lingering spice. Like Tawny #1, this whisky was fully matured in Tawny fortified wine casks (both fresh and charred). Our distillers then threw in some puncheon and hogshead barrels for fun, which allowed us to showcase the vibrant tropical notes of our Starward spirit. Alongside these welcomed tropical notes, Tawny #2 immediately gives way to dried raisins and toasted oak on the nose with complimentary flavours of brown sugar and rich dried fruits coming through on the palate.
A decadent 2018-vintage Australian single malt from Melbourne-based distillery Starward that was finished in Tawny fortified wine barrels from McLaren Vale and bottled in 2022 as part of its Projects series.
The Starward Projects series offers the distillers a chance to experiment with different recipes and casks to create limited-edition flavour-forward and characterful expressions.
Tasting Notes
Aromas of raisins, figs, toffee and dried fruit fill the nose, complemented by sweet caramel, rich dried fruits, brown sugar, tropical fruit, homemade panettone and baking spices throughout the palate.
About Starward
David Vitale grew up in a large Italian family in multicultural Melbourne, well known for its innovative food culture. You could almost say that Melbourne is obsessed with food. David ultimately set his mind on making an Australian whiskey. Since winemakers have already managed to create a piece of the old world in Australia, why shouldn't the same be possible for whiskey? In addition, wine barrels have previously been used to either store or finish whiskey. Of course, David had to try it and after a few attempts he was successful. For its whiskeys, Starward uses Australian malted barley that is fermented with brewer's yeast. It gives the whiskeys a fruity aroma. The wine barrels used for storage are selected very carefully and are always full of aromas. In the final step, the whiskeys are only stored in Melbourne for three years. With arctic winds from the south and dry winds from the desert, Melbourne can experience all four seasons in just one day. Due to the strong temperature differences, the whiskey reacts much faster in the barrel than would be the case in Scotland. As Melbourne is also warmer, the whiskey tends to increase in alcohol content during storage rather than decreasing over time. For the Barossa Valley Single Barrel, Starward customers can choose their own barrel in which the whiskey was stored.
