Bimber Ex-Oloroso Cask Small Batch #2 (2016-2020) 70cl
Bimber ex-Oloroso Sherry Cask Batch No.2 was distilled in 2016 and then stored in fresh bourbon casks. The whisky was then finished in former Oloroso sherry casks. On August 28, 2020, the whisky was bottled with a limited edition of only 920 bottles and a strength of 51.7% vol. without chill filtration and in natural colour.
Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks which are left a little dirty so that the bacteria and yeast left behind enhances the next spirit.
Tasting Notes
Nose : Raisins and dried berries with vanilla cream, malt bread and gingerbread, cinnamon, French crepes with a dash of lemon juice
Palate : silky texture with crushed red berries and quince jelly, chocolate sauce and walnuts; banana bread and cinnamon with golden syrup, seared pineapple and fresh, sweet sherry
About Bimber
Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at their own cooperage. Bimber uses direct fire to heat the small copper pot stills, and matures the spirit in hand-selected casks. The whisky is also bottled on site.
Their hand-crafted approach to whisky production passionately combines traditional methods, expertise and commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and they released their inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with their trademark accessible, fruit forward character.
